Nicholas Lodge:

Advanced Royal Icing TechniquesJoin Nicholas as he covers the finer points of royal icing. During this session students will learn fine piping, embroidery, Wedgwood style figure piping, pressure piping, and extension work.  Students will be working with small bags and tips, so should enjoy piping and have the desire to learn!  All supplies included.

Flower Fairy & Clematis - This cake will be based on the popular design that Nicholas created for the ICES Convention.  Nicholas will take you through the steps of creating the flower fairies, toadstools, and clematis flowers.  The class focuses on many different dusting, coloring, and shading techniques.  Nicholas will also be demonstrating the proper way to use the cutters and embossers in the Patchwork Cutter collection.  Once you know how to use one cutter, they are all used in the same manner.  This is an enchanting cake, suitable for many different occasions!  All supplies provided.

Ladies Shoes & Purse Fashion Cake Join Nicholas as he first teaches students to cover a cake with rolled fondant.  Next, a shoe and purse will be created with rolled fondant and gumpaste, then decorated and highlighted with accessories created from gumpaste.  This class will cover a wide variety of different decorating techniques that can easily be used on other cakes.  All supplies provided.

Gelatin Butterflies - Learn to make beautiful 3-D gelatin butterflies, complete a gum paste gerbera daisy and ladybug to enhance your cakes. These can be made in many different colors.

Crewel Embroidery Design - Learn another stitchery technique using royal icing to create a beautiful flower plaque.  Learn to use crimpers and patchwork cutters while making this crewel design.  Surprise yourself how easy this really is to do while amazing your clients with the incredible detailed appearance.

Gelatin Poinsettia Arrangement- Learn the techniques to make gelatin poinsettias and holly to grace your winter cakes. 

Layered Painting Winter Scene - During this class you will complete a layered painting cake layer on a fondant covered board. This includes learning how to work with gum paste, fondant, royal icing, and different methods of painting.

Carol Lowe

Gumpaste Poinsettia Flowers – (2 part class – MUST take both sessions) We will be making gumpaste poinsettia, along with holly leaves & berries.

Baby in a Bow Cake Topper – We will be creating a hand-modeled baby that will sit on a blanket inside a loopy bow.

Sculpted Fashion Purse - We will be carving an 8" square cake and covering with fondant to create a quick and easy handbag that can be embellished using your own imagination.

Baby Shoes - We will be making baby tennis shoes and baby saddle shoes.

Christmas Critter Figure Modeling – We will be making our old friend Santa Claus and one of his reindeer.

Patchwork Penguin Plaque – Patchwork cutters are one of the hottest things going when it comes to designing cakes. We’ll be working with Patchwork Cutters to create a cute Penquin plaque. We will explore all of the different variations for these intricate cutters.

Winter Birdhouse Cake – We will make either a round or square birdhouse with either a stone or wood look.  The birdhouses will then be accented with holly leaves/berries or pine boughs and ribbon.  These birdhouses can then be used as a centerpiece for any of your winter celebrations.
