Gary has over 35 years experience in sugar arts; and opened his own cake and candy supply store in 1996.  He has taught cake decorating for the past 25 years, travels to teach; and is an ICES scholarship approved instructor.  His exquisite cakes have won awards at many prestigious events, including gold medals at the Grand National in Tulsa.  His cakes have been featured in many publications and on the Food Network.

 

Jolly Roger Cake

Toba Garrett is a renowned cake artist, teacher and author for 30+ years.  She heads the department of cake decorating and design at the prestigious Institute of Culinary Education in New York City.  She has been there for 16 years.  She is the author of three books – Creative Cookies – Delicious Decorating for Any Occasion, The Well-Decorated Cake, and Professional Cake Decorating.  She is currently working on her 4th book to be released November 2009.

 

Brush Embroidery

Modeling Chocolate Roses with Leaves

Lambeth Ring Design Cake

Class Description: Students will learn one of Lambeth’s most exquisite designs, coupled with a modern twist and taught by a modern expert in this area.  In the first part of the class, students will be taught how to pipe the “rings”, pipe and flood beautiful collars, and attach the rings to the top shoulder of the cake with a shell border.  In the second part of the class, students will pipe “stringwork” around the rings, starting near the top center of the cake and followed through to the outside edge of the rings.  Students will then overpipe the rings and then pipe beautiful trelliswork under the rings.  Students will attach the flooded collars to the bottom of the cake board and pipe dimensional pipework, which creates a three-dimensional effect on the collars.

 

Supplies Required: Students will need to bring an 8” x 4” round cake covered in rolled fondant or royal icing.  The cake should be attached to a 12” round drum, also iced in fondant or royal icing.  Students will need 10 to 12 ounces of egg white royal icing, 4 ounces of “flood” icing, PME “0” tip, #3 and #5 round tips and #18 or 199 star tip.  Students also need a pastry bag with a coupler, ½ dozen paper cones, 2, 12” square cardboard covered in plastic wrap or waxed paper and taped tightly with masking tape, and an angular tweezers.  Students may also bring a tilting turntable or objects to place under the cake for piping at steep angles.

 

 

Australian Stringwork

Class Description: Classic to Australia, this stunning technique teaches students how to create a bridge from royal icing, fine stringwork from an 0 tip, hailspotting on the stringwork, and beautiful free-hand embroidery.

 

Supplies Required: 8” round Styrofoam (covered in rolled fondant) and attached to a 10” found drum also covered in rolled fondant, 6 oz of egg-white royal icing, 24 inches of adding machine paper, X-acto knife, #0, #3, #5 round tips, #1 sable brush, 1 oz egg whites, small ruler, 1 oz of flood icing, round plastic cup, extra 10X powder sugar, small off-set spatula, #2 pencil, a few stickpins, a quilting wheel, a box to take project home.

Michaelle Stidham CWPC has been teaching classes for over 17 years and is currently an instructor at Oakland Community College.  She is an ICES scholarship approved teacher.  Her work has been awarded several top prizes at several competitions, including two gold medals at the Grand National in Tulsa.

Connie DiTommaso (Poughkeepsie, New York)

Connie has been decorating over 20 years, and has recently become more involved in teaching. She has entered several cake competitions, earning a gold medal and Best of Division at the 2008 Mid Atlantic Cake Show. Also in 2008 at OSSAS in the wedding cake division she earned a silver medal and her cake was chosen to be featured in Brides magazine.  In 2009 she won First Place and Best of Division at the National Area Cake Competition. Most recently she won the Grand Prize at the 2009 Great American Cake Show in Maryland.  Cake decorating for Connie has grown from a hobby to a passion.

Betty Van Norstrand (Poughkeepsie, New York)

Chef Betty Van Norstrand has over 45 years of decorating experience, making her one of the Grande Dames of the art!  She has taught at the Culinary Institute of America, The International Pastry Arts Center, and the Institute of Culinary Education.  Her work has been published in numerous books and magazines.  She collaborated with Chef Albert Kumin on the 15th Anniversary Cake at Disney World.  She has earned numerous awards including gold and silver medals at the World Culinary Olympics in Frankfurt, Germany.  She was inducted into the ICES Hall of Fame in 1987.
