Rep’s Letter

 


Fall is creeping up on us and so is our next Day of Sharing.  We have B. Keith Ryder joining us for classes and demo’s for the weekend.  Our theme is Chocolate Chocolate and I can’t think of a better way to enjoy a fall weekend than sharing chocolate treats, recipes and ideas with friends.  We have an exciting schedule of demos and always a few surprises.  We will be raffling off a Kitchen Aid mixer along with some other incredible prizes.  Be sure to mark your calendar and send in your registration form soon.

 

I hope everyone had a great time at convention this year.  We had almost half of our Michigan membership attend in some capacity.  It was nice to see so many familiar faces.  I’m sorry if I didn’t get a lot of time to spend with everyone.  If I looked like I was on overload; I was.  For many of you it was a first-time experience, while for others it was nice to run into old friends.  There was certainly a lot happening.  Maybe some of you are already planning your trip to San Diego next year.

 

Plans are coming along for the Great Lakes Mini-Classes and competition for next spring.  A few of our planned instructors had scheduling issues, so we had to make some adjustments, but its going to be an incredible weekend of learning and sharing.  We have a wide-range of instructors and classes.  Registration forms are included in this newsletter.  Make sure to register early to have first choice of classes and get in on the early-bird discount.

 

A special congratulations for Michigan members, Dianne Gruenberg and Jennifer Dontz who both participated as assistants on the new TLC show Ultimate Cake Challenge.  Their segments were filmed in July in Los Angeles and I’ve been told it was a blast.  Their segments are currently in rotation and can be seen on TLC.  Also congratulations to Michaelle Stidham and Di Simmons for publishing their first book, Gelatin in Bloom.  They were busy signing copies at convention.  A very, very special birthday wish goes out to charter member, Ruth Littlepage for her 70th birthday.  We love you very much.

Fall DOS 2009

CHOCOLATE! CHOCOLATE!”

October 17 & 18, 2009

Its going to be a weekend filled with chocolate cake, chocolate fondant, candy clay,

chocolate candy….well, you get the picture.  It’s a Chocolate! Chocolate! weekend. 

Our special guest demonstrator will be our former International President, B. Keith Ryder from Virginia. 

He will also be offering classes on Saturday afternoon. 

There is lots of shopping in the area; Frankenmuth is only a couple of miles down the road.  Not to mention the hotel is near the Prime Outlets.  Register Early!

We have a block of rooms reserved, but you need to book by Saturday October 3, 2009

and mention ICES to get the group rate.  They will honor this rate for the night preceding and the night following the event based on availability.

They offer continental breakfast and a 10% discount at Exit (restaurant next door). Handicap rooms are available.

Note: that most of the other hotels in that area have already been sold out for that date.

PLEASE BOOK EARLY to make sure you have a place to stay. 

The hotel that we used in the spring still has rooms, but the price went up thirty bucks! 

That’s what happens in the Fall in Michigan.

 

Directions

 

Take I-75 to exit #136.  The hotel is right at the exit. 

The hall is 6 miles east of the expressway on Birch Run Road.

It takes about 10 minutes to get there.  The hall is on the south side of the road.  It’s very easy to find.

 


Potluck Saturday

 

We will be doing a pot-luck dinner again on Saturday evening of the DOS.  Last time, many members remarked

that they would like a recipe for some of the great dishes, so if you happen to have

the time to type it up, bring your recipe to share.  We have a full kitchen at our disposal,

so if you need an oven or plug for a crock pot or refrigerator space; its no problem.

 

Prize Drawings

 

Remember, you can earn tickets for great prizes

at the DOS just by sharing, something we do anyway!  For each dish you bring to pass,

or each sugar art you bring to display or each donation you bring for our raffles,

you will receive one ticket for some very nice prizes.

 

Sunday Chocolate Dessert Bar

 

In keeping with our chocolate theme, we will have a chocolate dessert table

set up on Sunday afternoon.  Everyone is encouraged to bring their favorite chocolate dessert to share. 

We will have a chocolate fountain with lots of things to dip and will be serving the chocolate

tier cake from Sunday’s demo.  Bring a recipe to pass out and we may even use it in a future newsletter.

 

Toys for Tots Charity

 

For anyone who would like to participate, we will be collecting toys at the Fall DOS for Toys for Tots. 

This is an organization that distributes toys to needy families for the holidays. 

They welcome any new, unwrapped toy.  They are especially in need of gifts for boys.

Class 1: Chocolate Truffles

 

9:00am – 12:00pm    $65 per student

 

Work with imported couverture chocolate.  Make traditional truffles, as well as fancy filled truffles.  Learn the secrets to a successful tempering

and a perfectly balanced ganache so you can create your own signature recipes.
Supplies:  Bring Tupperware or candy boxes to take truffles home.  An apron to protect your clothes.

 

Class 2: Chocolate Box

 

1:00pm – 4:00pm      $65 per student

 

Work with imported couverture chocolate.   Make a chocolate box as a perfect gift for someone special. Use tempering, cutwork, transfer sheets, and modeling chocolate.
Supplies: Bring a 6" or 8" square covered board and box to carry the project home, an apron.

 

Deadline for class count must be in October 1, 2009

 

 

 

B. Keith Ryder Demos

Demo on Saturday Night:  Fun with Modeling Chocolate

Learn quick and easy tips for using modeling chocolate to make your cakes stand out.
Demo  on Sunday :  Chocolate Tempering and Decorations
 Learn to temper chocolate successfully every time and use it to add to your cake decorating skills.  Chocolate enameling, transfer sheets, bows and more!


 B. KEITH RYDER

 

B. Keith Ryder has been decorating cakes since 1996.  Prior to that, he worked in both professional and amateur theatre for over 20 years.  He is a shop owner, cake show judge, two-term ICES President, former ICES representative and cake club president, and occasional contributor to American Cake Decorating Magazine.  He was the cake room chairman for the 2004 ICES Convention in Washington, DC; Keith was the co-director of the annual Mid-Atlantic Cake Show and Wedding Cake Competition for 3 years, and is now the director of the National Capital Area Cake Show in Virginia.  He has won numerous awards for his unique designs; he placed in the top 10 in the Wedding Cake Competition at the Oklahoma Sugar Art Show in 2005, and can be seen featured in the Food Network Special that was filmed during that event.  Keith’s work has been featured in both the Washington Post and the Washington Times, and he is an internationally recognized instructor in the sugar arts.

Country Kitchen SweetArt Classes

 

Chef Frank M. Lee from Indianapolis will be in Fort Wayne, Indiana on October 24th and October 25th to teach The Art of Sugar Work.  Chef Lee is a member of the ACF Culinary Federation and is a certified executive chef and a certified executive pastry chef. He has completed courses at Notter School, Andre Renard’s Sugar Art School and The French Pastry School.  Chef Lee is currently working on his Master Chocolatier at the Callebaut Chocolate Academy.  Professionals earn CEU points for this course.

Gingerbread Competition

 

The Macomb Culinary Institute will sponsor their fifth annual

gingerbread competition November 14-23, 2009. 

It will be held at English Gardens, Garfield Road at M-53 in Clinton Township. 

There is no entry fee and the displays will be auctioned to benefit Forgotten Harvest Food Bank.
